New Zealand's fleet of factory trawlers is designed to process tonnes of fish within hours of being caught. Fish are rapidly chilled and cut to maintain freshness and near zero waste of by-products.

Other vessels maintain freshness by working closely with state-of-the-art shore based processing facilities, located mainly in Dunedin, Timaru, Christchurch, Westport, Motueka, Nelson, Napier and Wellington.
